Around 35 pumpkins have to be processed to obtain 1 liter of pumpkin seed oil. To do this, the kernels are finely chopped and processed into a soft, deep green, sticky but intensely fragrant paste. Hot water and salt are added to the porridge. The water transports the necessary heat and the salt flavors and separates the protein in the kernels from the oil. The kernel mass is then roasted at 80°-90°. so that the water evaporates and the protein solidifies. Now the dark green oil can be pressed from the core mass, whereby the heavy cloudy substances slowly sink away naturally. The intensely nutty pumpkin seed oil harmonizes perfectly with soups, beans, egg dishes, in pumpkin seed pesto, with salads and with desserts, such as high-quality vanilla ice cream.
