The yuzu fruit is a Japanese citrus fruit, with much more complex flavors than the southern European citrus fruits we know. Its exceptionally intense aroma, with hints of green mandarins and green grapefruit inspires ambitious kitchen professionals with a whole new citrus freshness. The Yuzu powder is extracted from the juice of Yuzu fruits and therefore has little bitter notes and a mild acidity. For 1 kg of powder, 7.5 liters of juice are dried. It can be used in the sweet kitchen for ganaches, mousses and cream and in the savory kitchen for marinades and sauces for flavoring.
