The most luxurious alternative to dried porcini mushrooms are truffle chips. These are Tuber aestivum vitt., Summer truffles that have an earthy aroma and a mild nutty flavor. In the kitchen, they can be used as a charm, the main thing, they get a connection with butter, oil, cheese and cream. They taste great in omelette, in fine poultry and beef sauces, and enhance ragouts and mushroom preparations. Or, very cleverly, you push them under the poultry skin before the roast goes into the oven. Simply soak the chips in lukewarm water for a few minutes before use.
