Nicos Psaltiras processes Koroneiki olives. Apart from his own olives, only his neighbors, friends and relatives are used. The aroma features green grassy notes, green banana, ripe apple and a pleasant spiciness. A very harmonious oil. The mani, with its dry and hot climate and barren soils, demands a lot from the olive growers for a low yield.
