The firm capers are inlaid in extra virgin olive oil and can be eaten immediately. They taste in sauces, salads, on pizzas, in tuna creams, on carpaccio, with cooked ham and poultry, preferably with cold dishes. Their taste is fine and nutty. You can also put them in fine sauces shortly before the end of the cooking time.
