Cooking time about 30 minutes. Small, black lentils with a spicy, aromatic taste. When cooking, they release color pigments into the cooking water. Ideal for lentil salads or for a visually appealing lentil risotto with pancetta, fresh herbs, arugula and a young pecorino. The black lentils, which are said to be similar to caviar, should be boiled in relatively sparingly dosed water to give off as little of their unique color as possible.
