This unusual spice specialty comes from the southwest Indian region of Kerala. In a national park, old pepper varieties that are threatened with extinction are cultivated and hand-picked by the local tribes as part of a sustainable, ecological management method. The proportion of essential oils in these old varieties is more than twice as high as in conventional pepper.
