The sweet and spicy Grana Padano is produced throughout the Po Valley and has a long tradition. Ca de Stefani obtains its milk only from affiliated milk producers within a 30 km radius of the farm. This very special Grana Padano DOP matures between 20 and 24 months, whereas a commercial Grana is only between 9 and 16 months old. After nine months of storage, the cheese loaves receive the protected designation of origin DOP, then the cheese master decides which loaves have the potential to mature into a top-class cheese and stores them for another 11 to 15 months.
