The Bottega by Levi Gregoris is located in the historic center of San Daniele. Here, Levi matures around 6,000 hams a year. One might think that very little for someone who wants to make a living from it. But he is fully committed to his ideals of the best quality. This also includes a manageable production method. His hams are different: finely structured and delicate pink, with a full, sweet bouquet and hints of melon and almonds. This is not only due to the slow fattening and the good feed of the animals - whey, corn and grain are the main components - but also to the long maturation period of the ham. Levi only releases them for enjoyment after 16 months at the earliest.
