It always belonged to the natives of Campania, the oblong, firm tomato with few seeds and the thick skin. The skin is easy to peel, the meat-juice and the sugar-acid ratio is harmonious and intense. Just a few years ago it was threatened with extinction: the San Marzano tomato variety was hardly ever cultivated. In the meantime, it is experiencing a renaissance and is thriving again, also thanks to the commitment of Slow Food, on the fertile volcanic soil at the foot of Mount Vesuvius. This special terroir and a mild climate influenced by the sea shape its own unmistakable aromatic taste, which only develops in the can. For us the most beautiful way to capture the summer. The San Marzano is considered the best canned tomato in Italy. Their firm consistency and fruity taste are therefore protected by a consortium.
