Annatto refers to the orange-red seed of the small evergreen annatto or orean tree that is native to tropical South America. Even in pre-Columbian times Annatto was used for dyeing food, fabrics and as a body color also the western world until today Annatto for the same reason in butter, cheese, smoked fish and cosmetics. The seeds smell slightly flowery or peppermint and have a delicate, earthy, slightly peppery taste with a hint of bitterness. They give food a pleasantly earthy taste when used in much higher quantities than needed for dyeing.
