Jean-Marc Montegottero is at home in Beaujeu. He turned his hobby into a profession. His home-made nut, almond and pine nut oils have won many awards. Nevertheless, his oil mill remained a small craft business. This oil, whose strong taste remains in the mouth and whose aroma is long-lasting, does not tolerate any vinegar. However, balsamic and raspberry vinegar go very well. The pistachio oil goes well with avocado or shrimp cocktail and with chicory. But it can also be combined with pasta, potatoes or rice.
