A dressing made from Trebbiano white wine vinegar and concentrated grape must that contains less acid than an Aceto Balsamico di Modena, i.e. less than 6%. It has a subtle sweetness and the taste is reminiscent of its dark counterpart. Due to its bright clarity, it can also be used for light sauces, clear stocks, white meat, fish and salads and still sets the accent of a classic balsamic vinegar.
