The olive oil, which has been awarded the DOP seal (protected origin), is ground to 80% from hand-harvested Coratina olives and other varieties within 24 hours of harvest using a granite mill and extracted cold. The olive green oil with yellow reflections has a strong fruity scent. Its fruity taste, with pleasant bitter-spicy notes, goes well with vegetable dressings, soups, bruschetta and grilled meat. Nowhere in the world are more olives cultivated than in Apulia. The olive oil obtained here is known for the best quality. Near Bari, the Galantino family traditionally harvests the olives from over 15,000 trees from mid-October. Delicious olive oil is gently extracted from the perfectly ripened fruits in the most modern facilities.
