Ingo Holland prefers the extreme aroma density of cassia cinnamon. It is visually distinguished from Ceylon cinnamon by a thicker layer of bark and does not crack when breaking. The cinnamon sticks can be used to flavor jams, ice creams and red cabbage. Calf`s liver, veal, poultry and crustaceans can be made into an exciting perfume by adding a rod or portions of it to the pan over moderate heat.
