Sherry vinegar is fermented from the best sherry wines and can only be produced in the area around Jerez de la Frontera. Using the solera method, this sherry is placed for a second fermentation in an oak barrel that already contains old sherry vinegar with its fragrances and maturation bacteria. The special vinegar becomes softer and more aromatic and darker the longer it matures. This mature, racy sherry vinegar has a rich and lasting taste. Suitable for Gazpacho Andaluz, marinades, cocktails, vinaigrettes and salads.
