A must made from unripe grapes with a mildly sour flavor. Ideal for fish and rabbit sauces as a substitute for lemon, for game poultry and wild boar marinades, in vinaigrette sauces for deglazing or as a refreshing splash in mineral water or cocktails. Verjus du Perigord is considered an old French specialty with a lasting taste of grape juice with a small hint of gooseberry. Store cool after opening.
