This caviar is obtained from the roe of female trout. Like keta caviar, it is considered a substitute for caviar from the baffle. It tastes best when it is just slightly salted. The yellow caviar pearls are ideal for upgrading, for example, a herb cream soup or as an edible decoration for cold plates. Trout caviar is firm, crisp and tastes pleasantly strong.
