This tomato vinegar is a rarity and the fine result of a collaboration aimed at preserving culinary values. Using seeds from the Noah`s Ark archive in Schiltern, Erich Strekovics has re-released over 1,200 long-forgotten tomato varieties. Under the sun of Burgenland`s Seewinkel, the fruits have ripened to perfect flavor. Gently pressed, a juice with an ideal balance of sweetness and acidity forms the basis for a great vinegar with the intoxicating aroma of truly tasty tomatoes.
