The mousse consists of 50% foie gras, which Rougie marinated overnight in port wine. The other 50% consists of: chicken liver, green bacon, eggs and spices. When the two are mixed together, the result is a firm mousse with a delicate, creamy melt. Ideal as an ameuse geule, on canapes, as a garnish with cold game platters. As a companion to small fried fillet pieces of any kind. Diameter is approx. 54 mm.
