The legumes called fava or broad beans are the basis of the Foul Medammas dish, which is common in many Arab countries. The beans are soaked, boiled and seasoned with garlic, salt, cumin and other spices. Rounded off with olive oil, parsley and lemon juice, Foul Madammas is served with flatbread, feta cheese, eggs or cucumber and tomatoes.
