LITHOS olive oil from early harvest differs from conventional olive oil in that - as the name suggests - it is obtained at a stage in which the olives are not yet ripe. Only green olives are picked by hand from the tree because they cannot fall off the tree like fully ripe olives. The special quality can already be seen: the bright green color! Characteristic of the LITHOS Early Harvest Olive Oil are its distinctive scent of fresh grass and their special taste: intense, concentrated, full of fruit and slightly spicy on the finish - the sign of a young olive oil. An exquisite ingredient for the cold kitchen: first class and very high quality! Why is the `early harvest` more expensive? When pressing immature green olives, the oil yield is simply much lower than with ripe olives. So you accept a lower yield in favor of the special taste.
