The best air-dried ham is produced in the Andalusian mountain region of the Sierra Nevada. It inherits its name from the place where it is produced - serrano means from the mountains. The most famous ham is from the village of Trevelez, which is 1,700 m high and is also the highest place in Spain. Due to the dry and cool winds that blow all year round, the clear and clean Andalusian mountain air allows the front and back hams to mature into highly aromatic Serrano ham.
