BASIC Gel are pectins with different gelling behavior and are obtained from apples or citrus fruits. As a water-soluble fiber, pectin has the ability to gel-solidify liquids. The BASIC Gel is purely vegetable, neutral in taste and color and therefore for vegans / vegetarians, religious groups who prefer kosher or halal-compliant foods. This product is vegan and free of additives that must be identified on the menu in the EU. Without allergens EU: VO (EU) 1169/2011 and CH: LKV, Art. 8 and Appendix 1, which must be identified in the EU on delivery in communal catering on menus or other offer lists.

Gelling agent for cream and milk desserts. Gelling agent: pectin, dextrose. Application examples: Dairy dessert approx. 13% Fat: Mix 6g basic gel with 130 g sugar and 25 g vanilla sugar; Mix 400 g milk (3.5% fat) and 440 g cream (30% fat); Stir the gel-sugar mixture into the milk mixture. Bring to a boil. Put hot in glasses or cups and refrigerate. Do not shake or tumble when cooling. Milk dessert approx. 4% fat: mix 8g Basic Gel with 130 g sugar and 25 g vanilla sugar; Mix 400 g milk (3.5% fat) and 800 g cream (30% fat); Stir the gel-sugar mixture into the milk mixture. Bring to a boil. Put hot in glasses or cups and refrigerate. Do not shake or tumble when cooling. Store cool and dry.
