In contrast to most other products, the product is not overly sweet and has a semi-soft consistency. Citronat is made from the peel of the cedrat lemon (Citrus medica L.). A single one of the strongly fragrant fruits can weigh up to 3 kg. The main growing areas include Sicily, Greece and Corsica. The processing is relatively complex: the salted, half fruits are desalted, blanched, the core is removed and the peels are then candied in sugar solutions. The taste of citron is sweet and aromatic and spicy.
