The cocoa for Callebaut Origine chocolates comes from regions of the traditional cocoa countries on the equator belt. The Forastero variety, imported from Brazil, comes from the chocolate island of Sao Thome. The dark chocolate made from it with 70% cocoa has an enormous cocoa concentration. The smell is slightly spicy, with roasted notes and cappuccino impressions. The taste is initially pleasantly delicate and bitter, full and fruity and with notes of candied fruits. This is followed by floral impressions and a coffee bean aroma. Fine oak notes on the finish. Use: for glazes, for decorating and flavoring and for filling chocolates.
