Sumac, also called Sumak or Sicilian sugar is obtained from the fruit of Gewürzsumachs which is related to the staghorn sumac in this country known. Its flavor is slightly tart, fruity and tangy. Sumac is a popular table condiment in Turkey and Iran. The milled berries go well with eggplant, fish, seafood, chicken, yogurt, chickpeas, lamb, lentils, rice, pine nuts and walnuts. Sumac is mixed with fresh sliced onions eaten as an appetizer. The Turkish fast food specialty döner kebab is often seasoned with sumac.
