Potash / potassium carbonate is a baking agent that, thanks to its carbon dioxide content, loosens acidic or acid-forming doughs (potash only works together with acid) and causes them to expand rather than rise during baking. The white potash is mixed like deer horn salt with a little water so that it is better distributed in the dough. Potash is only used for certain Christmas baked goods based on honey dough (gingerbread, honey cake). 10g potash is enough for 500g flour.
