Lecithin is a vegetable emulsifier obtained from soya and is excellent for preparing foams. It also has amazing properties as a sauce thickener for `hopeless cases`. Lecithin is very effective. Just adding 0.6% of the weight of the liquid produces a stable foam, i.e. use approx. 6 g of lecithin per 1 kg of liquid. Lecithin is less suitable for alcohol-containing media; it is better to use SucroAir here. Lecithin is soluble in cold liquids. It is highly soluble in water, but loses effectiveness in fatty media.
