Annatto called the orange-red seeds of the small evergreen annatto or Orleans tree which is native to tropical South America. was used already in pre-Columbian times annatto for coloring food, fabrics and as body color; the Western world uses today annatto for the same reason in butter, cheese, smoked fish and cosmetics. The seeds smell weak flowery or peppermint and have a delicate, earthy, slightly peppery flavor with a hint of bitterness. They give a pleasantly earthy flavor foods when they are used in much higher amounts than the required for dyeing.
