20 years in the acacia barrel-stored TBA wine balsamessig. It is said that balsam fermentation is the highest art, the coronation of vinegar production. The sweetest grapes of the predicate stage Trockenbeerenauslese (TBA) make me a unique, particularly precious balsamessig. It took me more than twenty years to reach my harmonious maturity in ever smaller acacia barrels. When pulled into small bottles, I now count among the most precious spices and treats in the world. It has a wide spectrum of aromas, is voluminous on the palate with a lively acidity. Fits perfectly to strawberries, raspberries, ripened cheese or vanilla ice cream.
