The ribeye is a cut from the front part of the prime rib; it is cut between the neck and the roast beef. The marbling of fat that runs through the meat and the typical core of fat make the ribeye particularly juicy and tasty. A very popular cut among connoisseurs. It`s cut about two fingers thick. Red Heifer cattle grow up with selected farmers in Germany, primarily in North Rhine-Westphalia and Lower Saxony. After slaughtering, only the best pieces are selected to be refined in special maturing rooms. Special attention is paid to the marbling, i.e. the fine, white fat marbling in the meat.
