Cooking is fun with Demi Glace! It must not be missing in any professional kitchen. Classically made from veal bone, Mire Poix and red wine and reduced for hours. Decent but still harmoniously spiced with rosemary, thyme, clove, wax holder and garlic. Suitable for the refinement of all roasts and stews and as a base for sauces, with cream, sherry, port wine or stock.
