Cocoa butter is the fat pressed from the ground cocoa beans. It is obtained at temperatures between 70°C and 90°C. When liquid, the finished cocoa butter is light golden yellow and clear. It is then hardened and sold as a block or chips. The cocoa butter has a mild, aromatic smell with a slightly cooling taste. It is used for the production of chocolate, melted chocolate and couverture.
