This pure tamarind product is dissolved in hot water and strained for further processing. Tamarind belongs to the carob family and is originally an African spice that now plays an important role in the cuisines of other continents as well. The sour and fruity flavor of tamarind pairs perfectly with the spiciness of chilies and gives many South Indian dishes their characteristic hot and sour taste, as well as their dark color. In India, tamarind is usually combined with meat or legumes. Worcestershire sauce also contains tamarind.
