This pure tamarind product is dissolved in hot water for further processing and strained. Tamarind belongs to the family of carob plants and is originally an African spice, which today also plays an important role in the kitchens of other continents. The sour and fruity taste of the tamarind is perfectly compatible with the hotness of chilies and gives many South Indian dishes their characteristic pungent-sour taste and also their dark color. In India tamarind is usually combined with meat or legumes. Worcester sauce also contains tamarind.
