Currants are small, about the size of a pea, thin-skinned, seedless, reddish-blue to purplish-black grape berries. Made from the black currant grape (Latin: Vitis vinifera apyrena), named after the town of Corinth. After harvesting, they are dried in wooden boxes in the sun or shade, separated from the combs, de-stemmed and packaged. They are suitable for pilaf, sweet pastries and desserts. You can soak them in liqueur before baking.
