Green olives and anchovies - this is an extraordinary and interesting combination of flavors known as an aperitif but also popular as a bar snack. The taste is crisp and spicy. Green olives are still picked immature. Before being placed in brine, they are treated with lye. This process reduces the bitterness of not yet ripe fruits and improves the consistency of the pulp. The anchovies also taste of anchovies for anchovies. Ideal also as decoration for cold plates.
