For this intensively green olive oil, the quality level extra virgin, the olives are harvested by hand at exactly the right degree of ripeness from the south-facing trees. The olives are cold extracted with the utmost care within 6 hours of harvest. All processing operations are carried out with the utmost care. This wonderful olive oil is characterized by a flowery scent and a bitter, pungent taste. For over 100 years, the Cutrera family has been dedicated to the cultivation and care of olive trees in Sicily. In 1979 they founded their first oil mill, which was followed 20 years later by the second due to the excellent quality of the olive oil produced in the Iblei Mountains. Today the family business is run by the second generation and the third is in the starting blocks.
