Occurrence: September to January. The grading is from 25g-100g. (Sometimes larger) Brownish white truffle (tartufo bianco) with a relatively smooth surface and an intense smell. The color of the pulp varies depending on the nutrient tree (nut to cream-colored), the shape depending on the nature of the soil. White truffles are usually only sliced raw over the finished dishes. You calculate 5g (small starter) to 15g (generous over the main course) per serving. When we select the truffles for you, we always try to find tubers that come as close as possible to the weight you want. However, since we do not cut up any tubers, we can never exactly keep to this weight.
