Brownish-white truffles (tartufo bianco) with a relatively smooth surface and intense aroma. The color of the flesh varies depending on the host tree (nut-colored to cream-colored), and the shape depends on the soil composition. White truffles are generally shaved raw over finished dishes. Allow 5g per portion (for a small appetizer) to 15g per portion (generously over a main course). When selecting truffles for you, we always strive to find tubers that come as close as possible to your desired weight. However, since we do not cut the tubers, we can never guarantee an exact weight.
