After harvesting, the cockles are stored in tanks of seawater to naturally rid them of sand. After steaming, the mussels are removed from the shells and rinsed again in warm, salted water and, depending on their size, preserved in their own stock. They taste great on their own, with Pasta alle Vongole, with all rice and fish dishes. The Los Peperetes factory in Galicia produces top-class canned seafood. The owners Jesus Lorenzo and his Dona Paz originally started out preserving the small delicacies in their popular restaurant Los Peperetes.
