This powdered glucose is used in canning, confectionery and pastry making, as well as ice cream, candy or sherbet. According to the manufacturer`s instructions, the powder content is about 4% of the total mass. At 1 kg total mass = 40g glucose powder. The 40g then you have to deduct from the originally, needed amount of sugar. Instead of 800g of fruit puree and 200g of sugar, take 800g of puree, 160g of sugar and 40g of powder. Mix sugar and powder together and process normally.
