Bottarga di Muggine is a real specialty from southern Italy. The mullet roe is salted and dried and pressed into shape. Delicious: Freshly grated over pasta or rice with seafood, it intensifies the taste. Thinly sliced as carpaccio with olive oil, lemon juice and fresh tomatoes, it is served as a starter. In Japanese cuisine, roe is popular as karasumi with sake.
