Kappa is a natural gelling agent obtained from certain types of red algae. Kappa can be used to make jellies with a firm texture and brittle surface (eg jelly pearls and drops). Stir kappa into cold liquids and bring to the boil. Once gelled, preparations containing kappa can withstand temperatures up to 60 °C. Kappa loses some of its gelling ability in acidic media.

Gelling agent carrageenan E407. Gelling agent carrageenan E407 (obtained from red algae). Application: Depending on the desired consistency, stir in 5-10g kappa per litre of liquid, bring to the boil briefly, pour into moulds and allow to cool to gel. If necessary, heat up to +60°C again.
