With SucroAir you can conjure airy, stable foams. SucroAir is suitable for making foams from alcoholic liquids. SucroAir is highly water soluble, but not fat-soluble. SucroAir must therefore first be dissolved in the aqueous medium. Then slowly add the SucroAir mixture to the fat / oil medium.
