Sumac, also known as Sumak or Sicilian sugar, is derived from the fruits of the spice salmon, which is related to the vinegar tree known in this country. Its taste is slightly sour, fruity and tart. Sumac is a popular table spice in Turkey and Iran. The milled berries go well with eggplants, fish, seafood, chicken, yoghurt, chickpeas, lamb, lentils, rice, pine nuts and walnuts. Blended with freshly sliced onions, sumach is also enjoyed as an appetizer. The Turkish fast food specialty doner kebab is often seasoned with sumac.
