The seeds contain essential oils that give them a spicy, sweet-aromatic flavor. Since these fly away easily you should only mortar or grind if necessary. Cardamom is a bit spicy and goes well with meat, fish, vegetables, compote and pudding. It is also suitable for the production of sausage and bread and popular as a cake spice, for marinades or in punch. In Arab countries, one appreciates its aroma in coffee and tea. Green cardamom is native to southern India or Sri Lanka. It is grown today in Guatemala and in countries with a similar climate.
