Cubeb pepper is mainly grown in Indonesia and some African countries and is not easy to obtain in Europe. It is characterized by dry-woody, camphor-like and menthol-like aromas and bitter rather than sharp notes. The smell is reminiscent of lavender. At least it is very floral and should be ground just before use. The spice, also known as Javanese pepper, goes well with meat and vegetable dishes. The stalked berries can also be used to spit meat. Likewise, they are suitable whole or ground as a plate decoration. If you are brave, combine tonka beans and vanilla with fresh tropical fruits.
