Arrowroot starch is extracted from the roots of tropical Maranta plants. From the same plant family different colored varieties are popular as ornamental plants. The strength of arrowroot has a high gelling power and is tasteless and not cloudy. Therefore, it is an ideal binder for sauces and clear soups and can be used instead of regular wheat flour to make fine pastries. Before adding to heated sauces, the arrowroot starch should be stirred in a cold liquid.
