Sage is like rosemary slightly bitter and quite aromatic. The dried spice is also stronger than the fresh sage herb. Sparsely used, it spice up very nice pasta sauces, poultry such as duck and goose, pork and veal and meat steaks as well as liver and eel. Sage is beneficial in digesting fatty foods.
