Thyme is an important spice in many European cuisines, especially in Southern Europe. It is particularly typical of France, where fresh thyme sprigs are combined with other herbs to form bundles and added to soups, sauces or stews. In Central European cuisine, thyme is mostly used for soups, fish, poultry and eggs. Likewise, thyme, especially lemon thyme, improves every herb vinegar. Thyme is used for sausage spice blends with marjoram. Hard cheeses are also flavored with thyme.
